Happy Thanksgiving!!

Not a fan of turkey... but I LOVE me some side dishes, T-giving bevs and our annual Friday morning 12:00 am shopping extravaganza!

This Thanksgiving was spent in Haymarket VA with Steve, my mom, sis, her husband and his family. It was a blast having so many people together. We ate, drank and were merry.

Then... we, Steve, mom, Amanda and I, left for the Leesburg Outlets at 10:30 pm (some stores opened at 11:00 pm) and stayed there until about 2:45 am. We were in route home, when we caught our second wind and made an impromptu decision to change paths and head to Tyson's to check out their early morning deals! We arrived about 3:15 am and stayed until 5:45 am. It was literally an ALL night shopping event.

We made some fantastic purchases including a new teak patio set from Restoration Hardware! Amazingly, we were able to fit the table, four chairs, 3 people (Steve, mom and me) all our luggage and other new purchases into our Honda Fit. It was pretty unbelievable.

But we made it home safely and with plenty of time to set up our new patio set outside. It was a great weekend and we are so excited about all of our new purchases.

Brew Masters

Steve's new favorite show is premiering- right now!

He has been pumped for weeks to see the first Brew Masters show on Discovery. The show follows Sam Calagione, the craft brewer responsible for Dogfish Head Brewery and so far so good.

Check it on Sunday nights at 10:00 pm on Discovery.

Reminds me of Steve & me- brainstorming about our next brew batch. :o)

Windy City

I am on my way to Chicago for an Academy of General Dentistry conference and am currently sitting in the CHO airport waiting for my flight.
I have never been up to explore the Windy City, but have heard that it's lovely this time of year...

If you don't know, I am partial to nice warm 70-85 degree weather and feel that anything below 60 is freezing. So, yeah, this Chicago place definitely qualifies as freezing in my book.

Although I have heard that it is a nice, clean and bustling city- which I am sure I will enjoy- I would have really appreciated going to the Windy City in the summer. Maybe next year...

However, I have packed my warmest UGG's, multiple scarves and lots of layers in preparation.
I guess I will just have to do lots of power shopping to keep warm.

Harry Potter is here!

At first, I was a skeptic. I mean what could possibly be entertaining about a boy wizard... especially to (at the time) a college student?
Wizards don't even exist- duh!
But, after my friend Jamie lent me her copy of HP and the Sorcerer's Stone, I was hooked.
No, I would like to clarify, after reading about 1/3 of the book- I was hooked and scarfed up the rest of the books that were available at the time (1-4) like any knowledge hungry young Gryffindor would.
And then I pre-ordered books 5-7.
And then I re-read books 4-6 before 7 came out.
And then Ire-listened to book 7 on tape last summer.

So anyway, I guess you could say I am a fan. And I am pumped about the new movie, HP and the Deathly Hallows- Part I!
Which opens TONIGHT at midnight.

Christmas (decorating) came a little early in our house

November has been full of traveling for me. First Baltimore for dental things and play, then Richmond for dental things last Friday & Saturday, again tomorrow evening for dental things, and this weekend- Chicago for more dental things. It's been hectic.

Sunday, however, was our day to relax, spend some time together and decorate for Christmas! Steve un-rigged our Christmas tree from the storage shed, set it up and we spent the evening playing holiday tunes and decorating. I loved it!

Can't believe it is the middle of November and that Christmas is just over a month away!
So excited for the holiday season.

Happy Campers

This weekend we camped in Shenandoah National Park at Loft Mountain with the Flemings.

And we had a blast!
Saturday morning we got up bright and early, packed two coolers and two grocery bags worth of food and bevs ;o) sleeping bags, lots of blankets, our tent, extra layers, a few fun extras and this...
Yes, that is Bella, in a backpack. And she loves it.
We arrived just in time to set up camp, have a snack and get a 3.5 mile hike in before the chill set in.

 After hiking, we headed back to our campground, built our campfire and started cooking. The rest of the night consisted of a gorgeous sunset, cold drinks, popcorn, s'mores, stories around the campfire and lots of snuggling in our tents to stay warm!
The next day we cleaned up and changed back in C-ville then drove out to Veritas and Starr Hill for some libations. It was another beautiful day and we had a blast.

We had a great weekend and are so glad that Courtney and Jeff were able to spend Halloween weekend camping it up. It was such a great time, can't wait to do it again.

Lettuce Wrap Love

Tonight we made tuna and mahi lettuce wraps for dinner and they were delicious! So fresh and light but quite tasty, too.
I would highly recommend them.

And here is how we made them:

Lettuce wraps
Boston/Butter lettuce, separated and washed
feta cheese
Ramen noodles, cooked, drained then seasoned with season packet, a splash of rice wine vinegar and soy sauce

Peanut Sauce
1/4 cup creamy peanut butter
2 tablespoons soy sauce (I always use low sodium) 
2 tablespoons rice wine vinegar
splash of chili oil
splash of lime juice

Balsamic Pesto Sauce
1/4 cup skim milk
2 tablespoons balsamic vinegar
1 teaspoon chopped garlic
fresh basil
pesto seasoning mix

Chili Hot Sauce- caution this is HOT!
1/8 cup hot sauce (I used Sriracha Sauce)
1/8 cup hot water
2 tablespoons rice wine vinegar
splash of lime juice
3 Splenda packets
1 teaspoon chopped garlic
1 small chopped hot pepper

*So, I don't really measure when I concoct sauces. You will have to adjust the measurements as you like. I tasted the sauces as they were cooking to get the flavor that I was looking for.

Each sauce was made in a 1 quart sauce pan, with the same directions:
Saute garlic or melt peanut butter on med high heat. Add in liquids and seasoning, bring to a boil stirring frequently. Let simmer for 5 minutes. Sauces will thicken slightly as they cool. 

Use lettuce as wrap, adding veggies, cheese, noodles and sauces as desired. Enjoy!
