Going to the chapel...

Corbin and Tyler get married this weekend! Yay!
Can't wait to celebrate the big day (couple of days, really) with them both. It is going to be a wonderful time, and I am so excited to be a part of their union.

Ahhh, love. :o)

The Hills/City

Oh how I love MTV's The Hills and The City! Thank goodness that my dose of drama is back on the air and in no way disappointed on Monday night. Let's start with The Hills:

Heidi, Heidi, Heidi- are you serious? It is scary that you can't talk or show any expression. I do think mom was a little harsh when she asked if she should "put [Heidi's] burger in a blender for her" so she could eat it... yikes.
Since when have Lo/Audrina/Stephanie been friends with Kristin? I guess MTV has told them that they all have to play nice so the show can go on. Kristin is really slipping, though. Things are not looking good for her.

The City on the other hand-

Is less about drugs, alcohol and plastic surgery and more about "professional" catfights. Whitney's new line appeared to be well received and it looks like it will be a great season. It will be interesting to see what Olivia has to say when Whitney confronts her. Ahh, the drama. I can't help it- I am on the edge of my seat.

First things first...

I have learned a lot about decorating from my mom's fabulous interior designer, Mark. He is amazing and although I would L.O.V.E him to come and whip our new house into decoration perfection in a few short weeks when we move, I am going to have to do this one with only the lessons that I learned from him. :o)
The first thing he did for my mom was hunt down the perfect area rugs for her house. So... I have been hunting. Since we have hardwoods on both up and downstairs, we need quite a few.
Five in fact.
Last night I found two, yes two perfect rugs that I love, love, love. We decided on green for the living room and something calming and spa-like for our bedroom.

I am so excited to now find the perfect shade of paint for each of the spaces. Tonight we are going to Benjamin Moore to check some out.
Our big plan is to have the house painted after closing before we actually move in! Sounds simple, but we have a couple of other things going on that add complexity to the mix.
Small things like, oh, graduation from dental school and taking the third and final CFA exam and weddings and bachelorette parties. It is all great stuff, and it's all happening at once!
We are excited and I am super stoked about all of the upcoming decorating and home projects. Can't wait!

Tuna Burgers... as good as they look

So...
Friday night, we gave the tuna burgers a test run. They were a crowd pleaser!

We decided on the menu of:
Tuna burgers topped with aoli sauce on ciabatta bread
Strawberry and pecan salad (with Courtney's amazing homemade dressing!)&
Orzo, grape tomato, black olive and feta pasta salad

It was all delicious! And we both decided that it was pretty simple to make everything- an added bonus. The group consensus was that this was the perfect light, fresh spring meal and everyone ended the night content and happy.




Of course it is always a blast to spend the evening on (you guessed it) Courtney and Jeff's back deck. It is so fun to get together with them, because it is such a team effort when we grill out! Usually, Courtney and I prepare things and the guys do an amazing job with the grill. And it turns out scrumptious, every time. We can't wait to have them over to our back yard patio in just a few short weeks.

My kind of burger


Yummy!
Look at this Bobby Flay recipe that I stumbled upon. Anyone who knows me knows that (much to Steve's dismay) I am a vegetarian. However, this is one "burger" I would love to eat! I love seafood, especially tuna steak, and this sounds scrumptious.
I am invisioning the first cookout in our new backyard now...

For the Tuna Burgers:
1 1/2 pounds fresh tuna steaks, finely chopped
2 tablespoons Dijon mustard
1 tablespoon chipotle pepper puree
3 tablespoons canola oil
1 tablespoon honey
2 green onions, thinly sliced
Salt
Freshly ground black pepper
4 ciabatta rolls or French bread
Watercress

For the tapenade aioli:
1/4 cup kalamata olives, pitted and chopped
2 tablespoons capers, drained
2 cloves garlic, coarsely chopped
1 lemon, zested
1/2 lemon, juiced
1/2 cup prepared mayonnaise
Salt
Freshly ground black pepper
Directions
Combine the tuna, Dijon, chipotle, oil, honey and green onion in a bowl and season with salt and pepper. Shape the chopped tuna firmly into 8 round uniform patties about 1 1/2 inches thick. Place in the refrigerator for 30 minutes. (The burgers must be very cold to hold their shape when cooking.)

Grill burgers for 3 minutes on each side for medium doneness.

For the tapenade aioli:
Combine olives, capers, garlic, lemon zest and lemon juice in the bowl of a food processor and process until coarsely chopped. Add the mayonnaise and process until smooth, season with salt and pepper. Cover and refrigerate for at least 30 minutes before serving.

Serve burgers with ciabatta rolls and aioli. Garnish with watercress.

Happy Birthday to The Ryans!

This past week was my birthday (April 15) and Steve's birthday (April 17.) It is fun that our special days are so close together because celebrating together makes them extra special.

However, this year, my birthday was spent getting organized and mentally preparing myself to take the clinical portion of the dental licensure exam on Friday, April 16th. It was a stressful day (in general) but everything went smoothly and I was happy with my work. We will find out the results on Monday! It is the last hurdle standing between me and graduating as a DDS, so finishing on Friday evening was a huge relief. Which, we celebrated by heading straight to Sine' Irish Pub with classmates and having a nice cold Margarita!

Saturday morning I spent at Courtney's with the DG girls from Virginia Tech at Lizzy's baby shower! It was so much fun to see everyone and celebrate another little one that will be here this summer. I am excited to meet little Beckham Poole, he is going to be one handsome, well dressed, nicely snuggled, happy with his toys little man. :o)

Saturday evening Steve and I finally got a chance to celebrate our birthday's together! After a stroll down the chalk filled streets of Carytown, we found a quite little table on the patio of New York Deli and sat down to have a yummy dinner... or so we thought. Unfortunately, there was a loud, obnoxious table of "happy hour-ers" behind us and the service and food at NYD was pretty poor. Despite our decision to never go back there after the long and tortuous dinner, we had a wonderful time exploring Carytown, window shopping and then ending the evening at the Byrd Theater to see Avatar! We LOVE the movie and couldn't resist going to see it again when we noticed it was playing at the Byrd Theater. This time, even though it was not in 3D and IMAX, we still looooooooved it. After the movie, we had completely lost ourselves in the world of the Navi People and left The Fan feeling happy and content. It was a wonderful way to celebrate our first married birthday's.

HGTV

Who else is obsessed with HGTV? I don't know if it is just that we are in the process of buying our first home (yes, that's right, we have found "the one" and we are working towards closing- more on this soon!) but I am just absolutely addicted to all shows on HGTV.

I think Sarah is funny and I like how she usually goes over her budget to get the things she wants. It cracks me up- Steve says that I should not watch it anymore...

Mike is AMAZING. There is really no other word to describe what he does. The only thing I would change about the show is that I think they should post the names of terrible contractors who do the shady work so that they don't get any more business.

Suzanne, which one do they choose!? House #1, with the large back yard? House #2, with the great master suite? or House #3, slightly above budget but finished basement? You can be sure I will never change the channel until I know the answer! Even though I never pick the one they buy, it is great to see so many houses.

DC Bachelorette!

Saltville, VA- Here I Come


Today I leave for Saltville, VA, population 2,204. It is a real place (I am sure some of you are skeptical) in Southwest Virginia.
It even has a website.
And a Wiki page.
I will be there this week on a dental rotation. This is a "new" rotation for dental students that was added this year. Unfortunately, the dental clinic has not been completed yet, so the word around the school is that we work with local dentists in their offices. It will be fun to see a new part of the state.
I am also looking forward to this weekend... It is Corbin's Bachelorette party! So, Thursday evening, I will be making the 6 hour drive from Saltville to Montross to stay with Corbin and leave for DC on Friday, sheww! It is going to be a busy but exciting week.

Happy Easter!

Our amaryllis bloomed and it is breathtakingly beautiful. Thank you Mason for gifting this bulb to me 4 years ago- it has blossomed every year. I always look forward to the blooms, they are just gorgeous!
